Callum's Cilantro Lime Grilled Chicken Fajita Marinade (Free of the Top Eight Allergens Dinner)

At least twice a month (including today) I lose this recipe and freak out. To the internet it finally goes, where nothing ever really disappears. Right?

CALLUM'S CILANTRO LIME CHICKEN FAJITA MARINADE

3/4 cup olive oil
1 cup fresh lime juice (8-12 limes)
1/3 cup fresh cilantro, minced
9 garlic cloves, minced
3 tablespoons Worcestershire sauce (May contain gluten and/or anchovies. Gluten-free and vegan versions are available.)
1.5 tablespoons brown sugar
2 tablespoons salt
2.5 teaspoons pepper

In a bowl whisk lime juice, cilantro, garlic, Worcestershire sauce, brown sugar, one tablespoon salt, and pepper. Whisking constantly, drizzle in olive oil. Measure out and reserve 3/4 cup marinade for serving. Whisk one more tablespoon salt into remaining marinade and add chicken; cover and refrigerate for 15 minutes. Remove and grill.


Notes and tweakings:

I use low sodium Worcestshire sauce and still omit the second helping of salt. The original recipe called for vegetable oil instead of olive oil, and 3 jalapeño chiles, stemmed, seeded, and minced. The marinade is enough to make a giant batch Sunday with leftovers for Monday. Don't forget to drizzle the remaining marinade in your fajita, because it's the best part.

CALLUM'S BLUEBERRY PIE SMOOTHIE

1 cup frozen blueberries
1 banana
3/4 cup almond milk
1 tablespoon honey
1 tablespoon golden flaxseed meal
1/2 teaspoon fresh lemon juice
3/4 teaspoon cinnamon
pinch of nutmeg

Blend. Bon appétit!

Cooking for Callum: Balsamic & Apple Cider Vinegar Mushrooms (Free of the Top 8 Allergens)

We currently have three happy to eat anything mushroom eaters in our family of five. One of these days I'm sure Callum (21 months today!) will revolt along with his big brother and sister, but right now he super digs these. Double up if you love mushrooms, this only serves 2+ little sides, just right when you have mushroom leftovers hanging around.


CALLUM'S BALSAMIC & APPLE CIDER VINEGAR MUSHROOMS

1.5 tablespoons olive oil
1/3 tablespoon fresh minced garlic
4oz fresh mushrooms, sliced (I was desperate this last time and ended up buying Baby Bellas from Target, and they were gooooood!)
2.25 teaspoons balsamic vinegar
1 teaspoon apple cider vinegar
1 teaspoon water
pepper

Sauté garlic in olive oil for 1 to 2 minutes. Do not brown garlic. Add mushrooms and cook 2 minutes, stirring occasionally. Add balsamic vinegar, apple cider vinegar, and water. Cook 2 minutes. Season with pepper.

Yummy hot or cold. Bon appétit!

Cooking for Callum: Roast Chicken with Balsamic Bell Peppers (Free of the Top 8 Food Allergens)

A mother can only cook two dinners a night for just so long! Our youngest, Callum, has multiple food allergies and a severe gluten intolerance. At 16 months, he'll still eat just about anything we put in front of him, as long as it doesn't try to kill him, and he hasn't seen it yet that week. (Callum's Cardinal Rule: No leftovers!) The other challenge in finding Callum-friendly fare is that it must pass the test of four other family members, including our very picky Olive, and have ingredients I can pronounce. My goal: omit basic allergenic foods without whack-a-doodle alternatives.

This recipe, my friends, passes all our tests!

Cooking Light's Roast Chicken with Balsamic Bell Peppers

(Don't forget the gluten free chicken broth and soy free alternative to cooking spray.)


We pair it with Trader Joe's Frozen Brown Rice (3 minute microwave pouch is my bff) and French Green Beans. Maybe there's wine for mom, too.

While this recipe predates our little guy, it still has his name all over it. One night back in September of 2010 I made this, one of my absolute favorite quick and easy meals, and found it so repulsive that I dumped my share onto my husband's plate and proceeded to have ice cream for dinner. It was my husband's "What's up with you?" and the kids "No fair!" that prompted me to test for pregnancy the next morning. Hello, Callum!
